SINGAPORE, 20 April 2026 — As Filipino Food Month (Buwan ng Kalutong Filipino) continues into its third week, the Philippine Embassy in Singapore invites everyone to experience the flavors of Bacolod through a special showcase of Chicken Inasal at Raffles Courtyard.

Presented as part of the Regional Hawker Series, this pop-up features Filipino chef Nico Millanes, who returns to Singapore to bring his rendition of Chicken Inasal — a cherished regional specialty from Bacolod and Iloilo known for its smoky, tangy flavor. The dish is marinated in vinegar, calamansi, garlic, ginger, and lemongrass, then grilled over coals and basted with signature annatto oil. It is served with traditional Filipino sides, alongside Binakol, a comforting chicken soup cooked in coconut water.

Running from 20 to 26 April 2026, the showcase highlights Southeast Asia’s vibrant street food culture, with each featured hawker presenting dishes rooted in heritage, tradition, and personal stories in collaboration with Makansutra.

This special pop-up aligns with the 2026 Filipino Food Month theme, “Connected by Taste: Filipino Food in the Flavors of ASEAN,” underscoring the Philippines’ rich culinary traditions and its deep, enduring connections within the region’s food culture.

The Embassy encourages the community and all lovers of Filipino food to join in the month-long Food Month celebration. Experience first-hand the diversity and richness of Filipino cuisine across participating dining establishments and Food Trek partners in Singapore this April.
